Egusi Soup

Instructions

Step 1

Prepare the Soup Base:

Heat palm oil in a pot. Add the chopped onions and sauté until translucent.

Step 2

Add Pinnick Instant Party Jollof Blend:

Mix the 200g or Pinnick Instant Party Jollof Blend with 1 cup of water into a puree and add unto the heated oil and cook for 5 minutes.

Step 3

Add Crayfish and Seasonings:

Add ground crayfish, ground pepper. Stir and let the mixture cook for 5 minutes.

Step 4

Add Egusi:

Add the ground egusi and mix well. Pour in the stock and cook until the egusi thickens into a paste-like consistency.

Step 5

Add Greens & Meat:

Add spinach (or ugu leaves) and any cooked meats or fish. Stir and let the soup simmer for 10-15 minutes.

Step 6

Serve:

Serve hot with pounded yam, fufu, or garri.
