Party Jollof Rice

Instructions

Step 1

Parboil the Rice:

Wash the rice and parboil it for 5 minutes, then drain and set aside.

Step 2

Make the Tomato Puree:

Empty the Pinnick Instant Party Jollof Blend from the pouch into a bowl and mix with water as needed until it becomes a paste.

Step 3

Make the Tomato Sauce:

Heat the vegetable oil in a large pan. Add the mixed puree paste. Stir to combine and cook until the sauce thickens, and the oil begins to float.

Step 4

Cook the Jollof Rice:

Add the rice to the sauce, followed by water. Stir well, cover, and cook on low heat for 15-20 minutes, or until rice is fully cooked. Add butter in the last few minutes for extra flavour.

Step 5

Serve:

Once done, fluff the rice and serve with grilled meats or salad.
